Keto Crepes with Acai Matcha Glaze

Crepes:

  • 1 tablespoon of avocado oil (or other cooking oil)
  • 2 eggs
  • 2 tablespoons full fat coconut milk
  • 2 tablespoons water
  • ¼ cup almond flour
  • 1/8 cup coconut flour
  • ½ teaspoon vanilla
  • A few drops of stevia

Glaze:

  • 2 tablespoons full fat coconut milk
  • 2 tablespoons water
  • 2 pouches (200g) of Inner Glow Superfoods acai puree
  • ¼ cup frozen blueberries
  • 1 teaspoon of matcha powder (or to taste)
  • A few squirts of monk fruit sweetener (or you can use stevia or any other sweetener you prefer) – sweeten to taste!
  • A few drops of vanilla extract

Instructions:

Glaze:

  1. It is recommended to make the glaze ahead of the crepes, so it is all ready to be served when the crepes are nice and hot!
  2. Place all ingredients in a blender. Blend until well combined. Set aside.

Crepes:

  1. Mix together all crepe ingredients in a bowl except avocado oil until well combined.
  2. Heat avocado oil in a skillet.
  3. Pour mixture into pan. Turn after a few minutes, or when the bottom turns golden brown.
  4. Continue cooking until the second side is also a golden brown.
  5. Once the crepes are ready, place on separate plates, and pour the acai matcha glaze on top.
  6. Enjoy this low carb, keto friendly take on the traditional crepe with maple syrup!

Note, depending on your sugar intake goals, you can also make the glaze with maple syrup instead of monk fruit or stevia, which would bring the sugar content down when comparing with drenching your crepes with solely maple syrup.
