Acai Blueberry Blast Muffins

Ingredients: Filling: 1 tablespoon chia seeds 1 tablespoon water 1/4 cup thawed acai puree 1/4 cup blueberries 2 tablespoons of honey Muffins: 1 egg 1.4 cup coconut oil 5 teaspoons honey 1/2 cup orange juice 1/4 cup yogurt of your choice 3/4 cup coconut flour 1 cup almond flour 1 teaspoon baking soda 1.5 teaspoons baking powder 1/4 cup unsweetened shredded coconut 1 tablespoon flax seeds Instructions: Make filling first: Mix chia seeds with 1 tbsp. Inner Glow’s Acai Mousse

Ingredients: 1/2 cup acai puree 1 1/2 cups water 1/3 cup sugar (or substitute your favourite natural sweetener to taste for a low carb / low sugar alternative) 2 cups blueberries 1 package of gelatin (each one is the equivalent of 1 tbsp (15 ml)of gelatin. 1 envelope of dream whip (3.9 grams) Instructions: Dissolve one package of gelatin in 1/4 cup of cold water. Then add 1/4 cup of hot water and mix thoroughly. Set aside. Bring to boil the acai puree, water, sugar (or preferred sweetener) and blueberries. Acai Creamsicles

Ingredients: 1/2 cup acai puree 1 cup plain yogurt A few drops of stevia (or your favourite sweetener) to taste OR 2 tablespoons of maple syrup Instructions: Place all ingredients together in a blender.
